About the Anaerobic Natural process

The coffee cherry is anaerobically fermented in thanks for 120 hours with an ambient temperature of 19 degrees.

Every 24 hours, the coffee "juice" recirculates in the cherry enabling a consistent fermentation.

The the coffee is dried in the sun until the moisture level reaches between 10 to 11.4%. 

Finally, the coffee is stored in a special bag for stabilization and is kept stable for 1 month before it can be moved.
